Zucchini and Tomatoes

Recipe

1 large zucchini sliced

1 med onion cut in half and sliced

1 cup or more fresh mushrooms thickly sliced

1 15 oz can stewed or diced tomatoes

Salt & pepper to taste

2 Tb Italian seasonings

2 tsp garlic powder

1/4 cup fresh basil julienned

1/2 cup grated parmesan cheese

Regular olive oil

Ready for the fire

Heat a large skillet and add enough oil to coat the bottom of the pan. Add vegetables except mushrooms. Add all spices, and salt and pepper. Cover and let simmer on medium heat for 15 minutes. Add mushrooms and simmer 15 minutes more uncovered. Sprinkle with parmesan cheese remove from heat, cover and let sit for 5 more minutes before serving.
