Supper easy and delicious, I think you will like this everyone who has tried it does. I was going for an easy dairy free option and vegan seemed the smart way to go.
2 large or 3 small avocadoes
1/3 cup monk fruit (Lakanto)
1 small banana
1/cup Silk brand soy half n half or another non-dairy creamer
1 tsp vanilla
1 tsp instant espresso powder
1/3 cup cocoa powder
¼ tsp salt
Put everything into a food processor and process until smooth. Divide into 4 ramekins or decorative glasses and chill until set. Garnish with a strawberry, raspberries or other fruit.
Another option for a great presentation at a party is to make this mousse and my avocado mousse and present them in martini glasses decorated with fruit and berries something like this.
