
We love all kinds of bread in our house cornbread, regular bread, hushpuppies and of course biscuits. Now that we are watching our carbs I had to create something quick and easy and low carb to have with our meals. I use the keto biscuit recipe that is on Pinterest and it works with my low carb sausage gravy but they aren’t very versatile for dinner. Try these and let me know how you like them.
Recipe
Makes 10-12 Fritters
1 1/4 cup almond flour
3/4 cup lite rye flour + 1 Tb gluten optional
1 tsp salt
4 eggs
1 cup shredded cheese
Enough water to make a thick batter
Mix all dry ingredients including cheese. Now make a well in the center with a spoon and add the eggs. Beat the eggs slightly and start gradually mixing in the dry ingredients. When it gets too thick start adding water just a little at a time. Continue until you have a nice thick batter not a dough.
Heat a skillet (iron works best) over medium heat add some avocado oil to cover the bottom when the pan is hot. Oil your fingers and use them to form balls then flatten them slightly before adding them to the hot skillet. When you flip them the first time flatten them some more with the spatula. Fry on both sides until golden brown.
Feel free to be creative and add additional things like jalepenos, red peppers, onions, olives, different spices etc.
