Bacon Lettuce and Tomato Salad #keto #low carb

Wow! this is so good my husband and I could have eaten the whole bowl ourselves. Low Carb and keto friendly this is also gluten free and super easy.

There will always be those nights when you just don’t know what to do for dinner. Or you forgot to take something out of the freezer to thaw. Well, this is one of those dishes that works on a night like that.

Super easy and versatile you will use this recipe a lot so put it in you favorites file. I used mustard greens with mixed lettuces because I love mustard greens and they are available in stores right now. But you can use your favorite greens. Also important to note is that I am giving you ingredients but you will need to select amounts based on how many people you want to feed.

You will need:

Greens (a variety is best with added herbs is great too, like basil or cilantro)

Salad fixings like peppers, carrots, celery, radishes etc.

Tomatoes fresh or sun-dried not canned

Asiago or parmesan cheese (shredded)

Bacon (turkey is what we use in our house, nitrate free/natural) I like Applegate Farms

Creamy dressing – like ranch or creamy Cesar (I used Chipotle Ranch)

Mayonnaise

Fresh ground pepper

Cook the bacon in a skillet on medium heat (add avocado oil if using turkey bacon), set aside.

Wash and chop the greens if needed. Cut the other vegetables into bite size pieces. Add all of this to a bowl. Crumble up the bacon and add to the salad along with the cheese.

Combine the dressing and mayonnaise 1:1 so, 1 part mayo to 1 part dressing. Pour that over the salad and mix the whole thing up. Be careful not to over dress the salad you want it we’ll dressed 😉, but not dripping in dressing. Finally sprinkle with fresh pepper.

Serve with avocado on the side.
