Cilantro Lime Chicken

This is so refreshing and delicious made with summer vegetables.

You will need for 2 people

1 large chicken breast or 2 smaller ones

1/2 of a very large sweet onion like a Walla Walla

3-4 Sweet and hot peppers (2&2 works great) Use what ever kind you like and the heat you can handle.

1/2 cup Frontera brand Adobo Sauce

1cup tomatillo salsa or pureed tomatillo’s

Juice of 1/2 a fresh lime

Fresh cilantro

Salt to taste

Cut the chicken into bite sized cubes, cut the onion into medium thin slices, and clean and remove seeds from peppers then slice into thin circles.

Heat a skillet over medium-high heat, add the chicken cubes, toss for a few minutes till they start to firm up add the onions and the peppers. Sautee everything together, add a little salt a bit of cumin and maybe half a teaspoon to a teaspoon of garlic powder. Toss together and cook until vegetables and chicken are just tender. Add tomatillos and the Frontera adobo sauce, stir it all together, squeeze the half of lime juice into the skillet, stir it all up let everything warm through. Chop a small bunch of cilantro (use the amount you want) and add to the skillet do not cook the cilantro you really just want it to barely warm through because you want the flavor to be stronger then it would be if you actually cooked it.

Serve over rice with a margarita and you have a wonderful meal. 😎☀️
