Sun-dried tomato and chicken with tomatillos and zucchini

When the tomatoes arent quite ready to be picked yet and I’m craving tomato dishes, instead of always making sauce, I many times will create a dish with sun-dried tomatoes to give me that tomato taste that I’m craving.

This is one of those dishes.

1 large chicken breast cut into cubes

1 medium onion chopped

2 cloves garlic peeled and minced

3/4 cup sun-dried tomatoes with oil

1 zucchini chopped (large pieces)

1 16 oz. jar of tomatillos or tomatillo salsa

Heat a skillet on medium add tomatoes with the oil (add additional oil if needed). Also add the onion and garlic, saute until onions just begin to soften. Turn heat up to medium high and add the chicken, stir often to cook the chicken with out over cooking vegetables.

Pour in the tomatillo’s and zucchini and heat through. if you bring it to a boil the zucchini might overcook but it’s up to you I like my zucchini to stay firm and whole which will be achieved by this method. If you would like it a little bit soft then go for it and bring it to a simmer, let it cook just until the zucchini become tender. If you do over cook the zucchini it’s not that it’s not edible it will just make the dish watery and reduce the flavor.

I did not add additional seasonings to this, instead, I allowed all of the different flavors to meld together and believe me it turned out fantastic.

Serve this wonderful dish over your favorite rice and enjoy!
