Peanut Butter Chocolate Chip Cookies

LOW CARB

These are really good and super simple and can be made sugar-free. They only have almond flour, so they are very low-carb as well. This recipe only makes 9 nice-sized cookies. If you want more, make them smaller (adjust bake time accordingly) or double the recipe. My husband loves them. I hope you do too.

Preheat oven to 375’

Ingredients

1 cup peanut butter (not too runny)

½ cup monk fruit or coconut sugar or brown sugar

pinch of salt

1 med egg

½ tsp baking powdered1/8 tsp baking soda

½ cup chocolate chips (Lily’s if you want sugar-free)

1/4-1/2 cup almond flour or meal (do not substitute regular flour)

Directions

In a big bowl, mix all of the ingredients together except the almond flour.

Once everything is mixed well, add enough almond flour to make a dough. It should be thick but not stiff; you want to be able to make a nice ball with it to flatten into a hockey puck. The thickness of the peanut butter determines how much flour you will need. Now make 9 balls that you flatten into hockey pucks. Place them on a baking sheet about 1.5 inches apart. Bake them in the preheated oven for 8-10 minutes. They should be set up and not too soft in the center. Mine usually takes 10 minutes. I put them on the lower rack for 8 minutes, then on the upper rack for the last 2.

    ….none of them are good!
    But i am obligated to support!
    Even though i don’t understand why each troop doesn’t pick a recipe ………………….learn how to make them!!!!!!!!! & sell them!
    The scouts would get a badge! & patrons would be impressed that the cookies are homemade by scouts.. Even if they weren’t good, i’d buy them…………………….like i buy the mfr’d cookies they sell!@#$%^&*()_
