Lemon Chiffon Pie with Blackberry Topping

I recently had a craving for a lite refreshing lemon pie. Since I hadn’t made up a new pie recipe in a long time I decided it was time. Plus summertime is perfect for trying out new desserts that are lite and refreshing because we are always going to BBQs or picnics or backyard parties and they’re great to take to them.

So here’s what I came up with. Everyone that has tried it loved it. It’s sweet tart and quite fluffy 😋 Let me know if you do.

Ingredients

Lemon Syrup

Juice of 3 lemons

An equal amount of sugar

1/4 cup water

Add the juice of the lemons to a small pot with the sugar and the water. Bring to a boil reduce the heat and simmer this until it has reduced to a syrup. Now. Set this aside and allow the cool to room temperature while you are preparing the rest of the pie.

Filling

1- 9 or 10″ graham cracker crust

2- 8oz cream cheese

3/4 cup sugar or monk fruit sweetner

1 lime (juice and zest)

1 container of Truwhip whipped topping thawed

1 very full pint of blackberries (med sized)

In a good size bowl, using an electric mixer, beat the cream cheese, sugar, zest and juice of the lime until smooth and creamy. Taste and adjust for sweetness. Now, fold in the whipped topping making sure it’s completely combined. Fill the pie crust with the filling mixture and place it in the refrigerator for 4 hours.

Time to go back to that lemon syrup. Once the syrup is cool add the black berries gently stir them in and allow to soak up that syrup while the pie is setting up. After the 4 hours has passed remove the pie from the refrigerator. Using a fork gently remove the berries from the syrup and place on top of the pie. Cover the pie and place in refrigerator overnight to fully set up. Keep refrigerated in between serving.

Notes:

This pie can easily be made vegan and dairy free. Use your favorite plant based cream cheese, and sub out Coco Whip for the Truwhip. You may also need to check your crust to see if it’s vegan.

You can use any kind of berries for the topping.

Use the left over lemon syrup to make lemonade, just add water. Or as a mixer for margaritas 😉
