
Delicious healthy sugar free and low carb. These are great! my husband likes raisins in them but that raises the carb content quite a bit so I only do it occasionally when I know he is going to walk every day. This recipe makes 18 muffins and each is 1.5 net carbs without the raisins.
Recipe
Preheat oven to 375′
Wet ingredients, whisk these together until they are creamy and the sweetener is dissolved.
3/4 regular cup olive oil (not virgin)
1/4 cup milk or milk alternative
3/4 cup monk fruit (Laknonto)
2 tsp real vanilla
1 tsp orange extract
Dry ingredients, mix these together and add slowly to the wet mixing after each addition.
3 cups almond flour
3 Tb gluten
1 1/2 tsp baking powder
1/4 tsp salt
1/8 tsp citric acid
Once mixed well add:
2 cups shredded carrots
1 cup chopped pecans
Spray a (regular size) muffin tin with oil then spoon mixture into the cups and bake in a preheated oven for 30 minutes. Remove from the oven and let cool. Store in a sealed container at room temperature for 3 days or refrigerated for 5 days.
