
I heard so much about this delicious avocado pie so many people were enjoying that I wanted to try it for myself. I knew I could create one but wanted to see what others were doing. So, I searched the internet for recipes. Every recipe that I found had sweetened condensed milk as the sweetener. I was surprised, but of course now I knew why everyone was raving about this pie.
Of course I was not going to use sweetened condensed milk. I had removed that from our diet years ago. So I created a sugar free version that rivals any of those other ones.
3 small avocados or 2 large ones
10 oz cream cheese or Neufchetel cheese (only 300 calories a cup verses 759 for 8 oz cream cheese)
1/4 cup Lakato liquid Monk fruit or agave
5 drops liquid stevia ( I use NuStevia brand)
1 tsp vanilla extract
1 tsp lemon extract
Put all ingredients in a food processor or Vita Mix and process untill smooth. Store in airtight container in refrigerator. Tip: drizzle top of mousse with a little lemon juice before covering. For extra special treat top with berries of your choice.
