Picture this with black beans in it and it’s how this soup will look…..It really is delicious even tho it’s so easy to make.
1 lg onion chopped
2 cloves garlic minced
2 14 oz cans black beans (or equivalent cooked dry beans)
2 carrots sliced thin
1 16oz jar salsa
1 28oz can Meur Glen fire roasted tomatoes
1 cup frozen corn
1 TB Frontier brand adobo seasoning
2 TB avocado oil
½ cup dry vegetable soup mix (from frontier or other natural mix)
In a large pot saute the onion and garlic in 2 TB avocado oil until tender. Add remaining ingredients and bring to a boil. Lower heat and simmer for 30 minutes. Serve with sour cream, guacamole and tortilla chips.
