Black Bean Salsa Soup (Quick and easy soup)

Picture this with black beans in it and it’s how this soup will look…..

It really is delicious even tho it’s so easy to make.

1 lg onion chopped

2 cloves garlic minced

2 14 oz cans black beans (or equivalent cooked dry beans)

2 carrots sliced thin

1 16oz jar salsa

1 28oz can Meur Glen fire roasted tomatoes

1 cup frozen corn

1 TB Frontier brand adobo seasoning

2 TB avocado oil

½ cup dry vegetable soup mix (from frontier or other natural mix)

In a large pot saute the onion and garlic in 2 TB avocado oil until tender. Add remaining ingredients and bring to a boil. Lower heat and simmer for 30 minutes. Serve with sour cream, guacamole and tortilla chips.
