Simple and Quick Berry Cobbler

I love berry cobbler any kind of berry I’m not picky, but it can be a bit time consuming so I came up with this idea to make it quick and simple. I usually keep a pancake mix on hand for emergencies so I thought “why can’t I use it for a cobbler”? Lower calorie version included below.

I like Bob’s Red Mill brand for a lot of things and I like this buttermilk mix so I used it. You can use another brand if you want.

You will need:

4 cups berries fresh or frozen (blueberries, raspberries, blackberries, even pitted cherries)

1/2 cup sweetener ( I used Lakonta Monk Fruit)

1/4 cup pancake mix

2 Tb grass-fed butter, sliced into thin slices

Preheat your oven to 350′. Place the berries in a large bowl and add the sweetener and pancake mix. Mix it all together well. Pour this into an oiled 8×8 baking dish or equivalent and top with butter slices. Bake in a 350″ oven for 30-40 minutes until the berries are bubbly.

LOWER CALORIE VERSION

Substitute 2cups rolled oats for pancake mix. Melt the butter and mix it with the oats plus 1/2 cup monkfruit blend and 1tsp cinnamon. Spread this over the top of the berries and continue with the rest of the baking instructions.
