

This pasta salad is originally a recipe from my husband. He said his family used to make it often. We make it for every picnic and potluck. Everyone loves it. I just made it better by adding the shrimp.
1lb pasta such as elbow, spiral, or bowties
2/3 – 3/4 cup Mayonnaise
2 Tbsp Yellow mustard
Salt n Pepper (to taste)
1 10 oz jar sweet pickle relish or sub dill relish if you prefer
1 cup diced carrots
1 cup diced celery
1/2 – 3/4 cup diced sweet peppers
1 lb cooked shrimp (med too large) chopped
Boil the pasta in salted water according to package directions. Please salt the water it makes a big difference. After you drain the pasta refrigerate to chill. If you start with raw shrimp add old bay seasoning to the water and refrigerate them after draining to chill before chopping them up.
In a very large bowl place the pasta, veggies and shrimp, add the relish including the liquid. Now add a big spoon full of mayonnaise and about 2 Tbsp of mustard, add salt and pepper. Add more mayo as you go until it is the consistency you like.Mix everything up well, taste it and adjust seasoning and mayo if needed. Place salad in refrigerator to chill and allow flavors to meld together. Adjust anything you need too before serving.
