Sausage and Egg Breakfast Casserole

Breakfast can sometimes become the same old boring thing. We get in a rut because we are so busy running from thing to thing that we forget about eating real food. It’s good to slow down a bit and take just 10 minutes to put this simple casserole together maybe on a weekend day when you have time.

It’s simple and you can use ingredients you have on hand. If you don’t have everything I used substitute what you do have.

Ingredients

4 slices of good bread

4 eggs

1/2 cup milk of your choice

1/2 lb Bulk sausage

1/2 cup Minced onion

Shredded cheese (whatever you have that melts well)

Salt and pepper

Sliced tomatoes

1/4 cup chopped cilantro

Green onions sliced for garnish

Preheat an oven to 350’f

Start by frying out the sausage, once done crumple it up. Beat up the eggs with the milk and salt and pepper, set this aside.

Prepare a baking pan big enough for the bread to lay in one layer. Spray the pan with avocado oil spray and lay the bread down into the pan, spread the sausage over the bread, sprinkle, with cheese. Then add a layer of tomatoes, onions, and cilantro, top with cheese and pour the egg mixture all over the whole thing. Lastly sprinkle with the green onions.

Place this into the oven and bake for 20-30 minutes. It’s important that you watch it because there are several variables going on here that will affect baking time. Check it after 15 minutes, use a fork to see if it’s cooking in the middle, and determine about how much more time you will need.

Remember you can substitute ingredients. An example would be using parsley instead of cilantro, or adding diced peppers. Do Not add watery veggies like zucchini which would make it watery and a mess. I think next time I might use jalapenos, pepper jack cheese and chorizo then top it with salsa and sour cream to serve. What ever you decide to use be sure to.
