Ingredients
Your favorite pizza dough for a 12” pizza (maybe from your local health food or gourmet store)
Good Olive Oil
2-3 TB basil pesto or Gourmet Gardens Basil herb blend
1 big clove fresh garlic minced or pressed through a garlic press
Prepare dough according to directions, spread out onto a 12” pizza pan. Drizzle with a little olive oil, spread basil over top of that and then spread garlic on top of basil layer. Place into a preheated 400’ oven and bake for 8-10 minutes. Remove from oven and spread 2-3 Tb of natural ranch dressing or creamy feta dressing (Trader Joes makes a good clean one) all over the top set aside.
Meanwhile in a medium skillet over medium heat sauté just till barely tender (5 minutes)
½ small onion sliced thin
1 cup sliced baby portobello mushrooms
3-4 quartered canned artichokes in brine (drained)
At last minute add and sauté till just wilted
A handful of fresh Spinach (rough chopped)
Spread above ingredients onto the pizza and top with
½ cup grated parmesan cheese
1 cup good quality sharp cheddar cheese (shredded)
Place back into oven and finish baking 8-10 minutes until cheese is melted and edges start to bubble.
